free recipe friday: sarah’s curry dinner!

this recipe has it all! it’s easy, inexpensive, versatile, and delicious! i invented this the first year we were married, and it is one of a few of my “early” recipes i still make on a regular basis. i hate to be brand specific in my recipes, but you must, must, MUST use the mahatma brand saffron yellow rice for this, or it will not work. i have made this with chicken, shrimp, and tofu, all with stellar results.
sarah’s curry dinner
2T non-hydrogenated margarine (i like earth balance)
1 package (5oz) mahatma brand saffron yellow seasonings & rice
1tsp onion salt
1T each: veg bouillon powder & curry powder
2 1/4cups water
4-6 tofu or chicken filets – frozen (or a few lbs of shrimp)
preheat the oven to 350. drop the margarine into a 9×13 dish and place in the oven to melt. when the pan is hot, combine rice, seasonings, curry powder, and water in the dish; place protein of choice over rice, distributing evenly. bake in the preheated oven for about an hour, checking occasionally for doneness. serve hot with a nice side of steamy broccoli.

*tofu is good source of calcium, iron and copper, and a very good source of protein and phosphorus.
