free recipe friday: spicy quinoa breakfast burrito

i know it is, in texas, blasphemous to suggest that there could be any breakfast food other than the ubiquitous taco. sorry, san antonio, the rest of the country enjoys breakfast burritos! this is my version based on the highly nutritious grain quinoa (keen-wa). feel free to add or subtract other ingredients to fit your family’s taste, but this one has gone over quite well with my family. today’s recipe: spicy quinoa breakfast burrito! (makes 6 burritos)
1/2cup dry white quinoa, rinsed well
1 1/4cup spicy V-8
1/2 medium onion, diced finely
1large clove garlic, minced
1/4cup grated cheese (cheddar or nondairy)
1cup fresh spinach leaves, washed and torn
few drops hot sauce
6whole grain tortillas, warmed

cook onion & garlic in a little olive oil over medium heat until soft. stir in quinoa and v-8. lower heat to a simmer; cover and cook 20minutes. in each tortilla, place1/4cup spinach, 1T cheese, and a good scoop of the quinoa. drizzle over with a little hot sauce (if desired), roll up and serve to some happy breakfasters!

*quinoa is high in complete protein and calcium. it’s also got plenty of fiber and iron.
*spinach has calcium, vitamin A, vitamin C, and iron.
*V-8 juice also has plenty of vitamins A & C, and some calcium and iron.
